I Love My Crockpot: Chicken Recipes

As a busy mom I can honestly say I LOVE MY CROCKPOT! I consider myself the queen of one-pot meals, and many of my creations come from my slow cooker. Chicken is a favorite of mine, because it always comes out moist and tender and my kids will (mostly) eat it.
Honey Soy Garlic Chicken: I like to use chicken thighs because they are more flavorful, but chicken breasts will work as well. Mix in bowl: 1/8 cup soy sauce, 1/8 cup honey, 1/8 cup rice wine vinegar, 2 tablespoons sesame oil, 1/4 cup melted butter, 2 tablespoons Dijon mustard, 7-8 garlic cloves, salt and pepper. Toss the chicken (cubed, whole, frozen, thawed...however you have it) into the slow cooker. Pour the mixture over it and stir to get the chicken coated. Set for High/6 hours. Mix a few times during the 6 hours, serve with rice and a salad. The resulting chicken is tender, sweet and savory at the same time. Don't be afraid of the garlic...the slow roasting results in a sweet garlic flavor.
Whole Chicken with White Wine: What easier way to cook a whole chicken without overcooking? Toss it in the crockpot! How to: Rinse and remove giblit bag. I like to stuff the cavity with a lemon, orange or onion and garlic...depending on my mood and what I've got on hand. Rub the skin with olive oil, salt and pepper...sometimes I add some paprika for color and a sweet peppery flavor. Put the chicken in the slow cooker, add 1/2 cup white wine, set to Slow/8 hours.
