They're Not Just for Guacamole Anymore
I once heard that avocados are so nutritionally dense, you could survive on them as a sole source of food. Now whether there is any truth to that, I don't know. I do know they are one of my favorite foods and here I offer some ways to use them that you may not have read before.
Before I begin, a few basics on the how-tos of avocados. First, buy 'em firm if you don't plan to use them for a few days. Avocados are one of the only fruits that fully ripen after they are picked. Stay away from any that have a mushy feel...they are past their prime. I usually purchase a few every week so I always have a ripe one on hand. When ripe (there will be a slight give when pressed) you can either refrigerate or cut it open. I like to use a steak knife to cut around the pit, then twist to open. Pop the pit out with your knife and scoop out the flesh with a spoon.
Tuna Salad w/Avocado: Replace the mayo in your tuna salad recipe for mashed avocado. The smooth and fatty flesh is a nice substitute for the same old mayo...and it will add a vibrant color to your salad. The fats in avocados are much heathier than those in mayo. Enjoy on toasted multi-grain bread.
Avocado Baby Food: Every parenting message board will have a post about the benefits of avocados as a first food - and they're right! Everything about the avocado works as baby food...the texture, ease of mashing, nutritious...but not every baby will take to the taste. Mix the avocado with a mashed banana or applesauce to sweeten it up a bit, and it will become your baby's new favorite meal!
Avocado Salad Dressing: Blending half an avocado in your favorite vinegrette will quickly give it a creamy texture that will hold it's own against a nice frisee or radicchio salad. Here is one of my recipes from my salad dressing Hub: 1/4 cup rice wine vinegar, 1/2 cup extra virgin olive oil, salt & pepper to taste, 1/2 avocado. Add all ingredients into a wide cup (think coffee mug) and blend with hand blender until smooth and creamy.

Mom,
Son two has commenced growing Avocados commercially.
It is a long slow haul, as they take 5 years to mature in to pickable fruit.
He is in safe hands, his father -in- law has been growing them for 20 years. Their property is next door to his father - in laws.

Sliced avocados mixed with cubed mangoes are a delight to eat. I also love avocado shakes. :-) In fact I just had one. hehe
The avocado-mango treat is simply that...sliced avocados and cubed mangoes in a bowl. You could just put all purpose cream to taste. As for our avocado shake, we just blend the avocado together with crushed ice, milk and sugar to taste. :-)

My father grew up in Trinidad, where avocados and coconuts grew wild in his back yard! Needless to say, we had these tasty fruits on regular basis in my home, even though we lived in the Deep South of the U.S. Yum!
